FLAVORHOOD Season 2

FLAVORHOOD is Saigon Café’s chef collaboration series, bringing some of the city’s distinctive culinary voices together within one dining experience at Sheraton Saigon Grand Opera Hotel.

For Season 2, Executive Chef Ivan Barone welcomes chefs from The Brix, Mekong Merchant and FUME to take over a dedicated live station at Saigon Café, one week at a time. Each chef brings the flavours, techniques and signature character of their own kitchen, while guests continue to enjoy the full Seafood Buffet Dinner, from fresh seafood and international favourites to seven live cooking stations.

Who's cooking up FLAVORHOOD?

Three guest chefs from Saigon's own neighbourhoods, from Thao Dien to the heart of District 1, alongside Chef Ivan Barone, Executive Chef of Sheraton Saigon and host of Saigon Café. Each arrives with a story, a technique and the dishes their regulars keep coming back for.

THE BRIX

Raised in France in a family with Asian roots, Phong learned to cook at his mother's side long before he had a kitchen of his own. Today he is Head Chef of THE BRIX, after leading the kitchen at QUINCE Saigon, and he refuses to be boxed into any single cuisine.

Mekong Merchant

Jay trained at Mead's, one of Western Australia's leading restaurants, from the age of seventeen, then sharpened his craft in Melbourne and took his knives across Canada, Germany and French Polynesia.

FUME

Born in Kobe, Shozo stepped into a Japanese kitchen at fifteen and trained under masters in Osaka and Tokyo. After five years in Singapore and one in Canada, Ho Chi Minh City's energy made him stay, and in 2019 he opened FUME.

TWO DECADES OF WESTERN COMFORT

For more than two decades, Mekong Merchant has been Thao Dien's best-kept secret: a courtyard ringed by thatched roofs, a blackboard of Phu Quoc seafood that changes daily, and pizza built on slow-fermented dough. Chef Jay brings that spirit to Saigon Café: pristine seafood, bold flavour and plates made for the whole table.

GRAND MARKET NIGHTS

One final stop, one full reunion, and the guest chef dinner Saigon has waited all season for. All four FLAVORHOOD chefs return to Saigon Café, each at a station of their own: The Brix's wood fire, Mekong Merchant's seafood blackboard, FUME"s straw flame and Chef Ivan's Italian kitchen, gathered around the largest five-star hotel buffet in downtown Saigon. If you've followed the season, this is the night to find the dish you missed. If you're just joining, it's the whole season in one sitting.

SAIGON CAFÉ

Located on Dong Khoi Street in the heart of District 1, Saigon Café at Sheraton Saigon Grand Opera Hotel is where chefs, kitchens and culinary stories from across the city come together around one table.

Since 2003, the restaurant has been known for its seafood buffet in central Saigon, featuring Nha Trang lobster, crab, grilled oysters, sushi, sashimi, Asian and international favourites, and seven live cooking stations.

During FLAVORHOOD, this familiar setting becomes a stage for something new. Each guest chef brings a piece of their own kitchen to Saigon Café, while the restaurant’s signature Seafood Buffet Dinner remains the foundation that brings every collaboration together.

  • Do I need to book FLAVORHOOD in advance?

    Advance reservations are recommended, especially during featured chef weeks and the Grand Market Nights finale. Simply select your preferred FLAVORHOOD date through the Book Now button on this page.

    As each chef appears for a limited period only, booking early is the best way to experience the week you want.

  • Is there a special offer for Marriott Bonvoy members?

    Yes. Marriott Bonvoy members can enjoy the Saigon Café buffet at a special rate of VND 1,490,000 NETT per adult, currently available through 31 October 2026, unless otherwise updated.

    Each featured chef brings a taste of their own culinary world into Saigon Café. Expect specially selected dishes inspired by their restaurant, cooking philosophy and signature flavours, presented alongside Saigon Café’s international buffet.

    The menu changes with every takeover, so each FLAVORHOOD week offers something different to discover.

  • What is FLAVORHOOD Season 2?

    FLAVORHOOD Season 2 is Saigon Café’s local guest chef collaboration, bringing some of Saigon’s distinctive neighbourhood restaurants and culinary personalities into one international buffet experience. Across the season, Chef Phong of The Brix, Chef Jay of Mekong Merchant, Chef Ivan Barone of Saigon Café and Chef Shozo of FUME each take over a featured week with their own flavours, stories and signature dishes.

  • When does FLAVORHOOD Season 2 take place?

    FLAVORHOOD follows a one-week-on, one-week-off rhythm, giving each chef their own moment in the hood:
